In the extraction step of QuEChERS, the premixed salts serve several critical purposes:
Water removal / dehydration: The anhydrous MgSO₄ binds and removes water from the sample mixture. This helps dry out the watery sample (like fruits/vegetables which contain water) so that water doesn’t remain in the organic solvent layer. This “salting-out” helps the organic solvent — typically Acetonitrile — to separate cleanly from the aqueous phase
